Diamond Grill Chef to hold public demonstration

ALEXANDRIA, La. (KALB News Channel 5) Diamond Grill Chef William LeRoux to demonstrate at Westside Regional Library.

Four years ago, Chef William LeRoux brought his South Louisiana expertise to the Diamond Grill in downtown Alexandria. Now he's bringing his Southern flare to Westside Regional Library for a public demonstration on cooking with root vegetables. "Dig In: Discover Your Roots" will be held July 22 from 6 to 7:30 p.m. at Westside Regional Library.

The event's menu includes Asparagus and Potato Soup, Celery Root Remoulade, and a Shallot and Ginger topping for fish. LeRoux will demonstrate various cooking techniques including a French technique called Reduction, which he says produces an almost "Oriental flavor." He will also demonstrate how to use potatoes as a thickening agent for soup, versus adding corn starch or a roux. 

"Anyone can have a recipe, but it is the techniques in cooking that are the most important," LeRoux said in a telephone interview on Tuesday. He encourages people to keep learning and growing when it comes to cooking.

"Cooking is always an evolution. If you don't learn something new and try something new it becomes stagnant," he said. "Nowadays it's very different from ten or twenty years ago, with the Internet and all the cooking programs. Engross yourself into websites that have chef blogs, watch programs on TV, experiment and try something new."
