DEVILLE, La. (KALB News Channel 5) - Some students in Cenla are learning to be a cut above the rest.

It's about as hands on as you can get in a high school classroom.

"They'll do most of the knife work, deboning, then they can do a lot of the grinding, and wrapping and writing on it and cataloging and putting it in the freezers." Said Teacher Michel "Boo" Paul.

The Meat Processing class at Buckeye High School isn't textbooks and math exams, it's real world experience the students are learning right now.

"It educates us, gives us something to do, something to learn" Said Alissa Richardson.

All the while opening up opportunities as they look towards the future.

"You get hands on experience, this is actually going to help you in life, it just excited me to come here and do this, it's fun." Said Bryce Nugent.

"We need to do something for those kids, give them a career, they know how to function out in the world, get a job, daily responsibilities, how to take orders, how to come to work every day, and that's what I'm here trying to do, if they make it in the meat business, great, but at least they'll have some experience to go out in the real world and get a job." Said Paul.

Some of the meats students cut and prepare themselves include pork, beef, deer and even alligator.
