Jambalaya recipe as seen on GDC


ALEXANDRIA, La. (KALB) - Recipe for jambalaya as seen on Good Day Cenla:

1-3/4 cup oil
3-1/2 lb pork - Boston butts cut in chunks
2 lbs smoked sausage, cut in slices
2 lbs boneless chicken thighs, in chunks
2-1/2 cups onions, diced
1 cup bell pepper, diced
1 cup green onion, sliced thin
16 cups chicken stock
8 cups parboiled rice
kitchen bouquet as needed
Tony's to season meet after cutting

Pour oil in a pot, just enough to cover the bottom
When heated, add pork and brown - add pork sausage
When this is almost done, add chicken
Once it is thoroughly browned, add bell peppers and onions
Cook until wilted
Add enough water to tenderize meat (barely covering meat)
You may want to add a little kitchen bouquet to color meat
Cover pot and cook until tender
Add chicken broth, rice, green onions and mix thoroughly
Cover and cook on low fire
Stir occasionally until rice is cooked
If it has too much liquid, remove lid and let cook on low until extra water evaporates

Enough for 1 full sized pan
